Don’t toss that chickpea liquid (aquafaba)! It’s packed with protein and starch, making it the perfect emulsifier for a rich, creamy, egg-free garlic mayo. For an even thicker texture, add a few whole chickpeas. This vegan mayo is delicious as a spread for sandwiches, and works beautifully in marinades, sauces, and salad dressings!
Vegan Mayo/Toum (Garlic aioli) Recipe
Ingredients:
	•	1/4 cup aquafaba (liquid from canned chickpeas)
	•	2 garlic cloves, chopped
	•	1/4 tsp sea salt
	•	3 tsp lemon juice
	•	3/4–1 cup sunflower oil (or another neutral oil)

Instructions:
	1.	Add the aquafaba, chopped garlic, sea salt, and lemon juice to a tall jar.
	2.	Use an immersion blender and blend on high.
	3.	Slowly drip in the oil with the blender running on high speed. Gradually increase to a slow stream. This should take 1-2 minutes. The slower, the better!
	4.	Move the blender up and down to add air and help thicken it. If it’s too thin, add more oil to reach a creamier consistency.
	5.	Use right away or store in the fridge. It will thicken as it cools.
Store in a sealed container in the fridge for up to 2 weeks!
