INGREDIENTS

For the Qamar al-Din Base

  • 200 g (7 oz) Ziyad Brand Qamar al-Din sheets (apricot fruit leather)
  • 2 cups water

For the Milk Pudding

  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon Ziyad Brand orange blossom water or Ziyad Brand rosewater (optional, for flavor)

Garnish (optional)

  • Ziyad Brand pistachios, crushed

Qamar al-Din Milk and Fruit Pudding is a delicious dessert that combines the tangy sweetness of apricot fruit leather with the creaminess of milk pudding. It’s popular during Ramadan but can be enjoyed year-round. Specially as a summer treat.

Directions

Step 1 – Prepare the Qamar al-Din Mixture

  1. Cut the Qamar al-Din sheets into small pieces.
  2. In a small saucepan, combine the pieces with water .
  3. Heat gently over medium-low heat, stirring frequently, until the fruit leather softens. Add to a blender and blend till smooth.
  4. Set aside to cool slightly.

Step 2 – Prepare the Milk Pudding

  1. In a medium saucepan, whisk together milk, sugar, and cornstarch until the cornstarch dissolves.
  2. Heat the mixture over medium heat, stirring constantly, until it thickens to a custard-like consistency. This should take about 8–10 minutes.
  3. Remove from heat and stir in the orange blossom water or rosewater, if using.

Step 3 – Assemble the Pudding

  1. In serving glasses or bowls, pour a layer of the milk pudding at the bottom.
  2. Top with a layer of the Qamar al-Din mixture smoothing it with a spoon.
  3. Garnish with crushed pistachios and ServeLet the assembled pudding cool to room temperature, then refrigerate for at least 2 hours to set.
