Ouze is a Middle Eastern dish that combines tender, spiced lamb with fragrant rice, nuts, and sometimes vegetables. It’s perfect for celebrations and gatherings. Here’s how to prepare this flavorful dish:

Directions
Step 1 – Cook the Lamb
- Place the lamb in a large pot and add the onion, bay leaves, cardamom pods, cinnamon stick, black peppercorns, and salt.
- Pour in enough water to cover the lamb. Bring to a boil, then reduce heat to a simmer.
- Skim off any foam that rises to the surface. Cover and simmer for 1.5–2 hours, or until the lamb is tender.
- Remove the lamb from the broth and set aside. Strain the broth and reserve for cooking the rice.
Step 2 – Prepare the Rice
- Heat the ghee in a large pot. Add the chopped onion and sauté until golden.
- Stir in the frozen vegetables and cook for 2–3 minutes.
- Add the Ouze spice blend, and salt, stirring to coat the onions and vegetables.
- Drain the soaked rice and add it to the pot. Stir for 1–2 minutes to toast the rice lightly.
- Pour in the reserved lamb broth (3 1/2 cups). Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes, or until the rice is cooked and fluffy.
Step 3 – Roast the Lamb (Optional)
- Preheat your oven to 400°F (200°C).
- Place the cooked lamb on a baking tray and brush with a little ghee. Roast for 10–15 minutes until browned and crispy.
Step 4 – Assemble the Ouze
- Spread the rice on a large serving platter.
- Place the lamb on top of the rice.
- Garnish with toasted almonds, and pine nuts.
