Warm, comforting, and packed with flavor—this Turkish-style bulgur (burghul) pilaf is a simple yet delicious side dish that pairs beautifully with your favorite stews, grilled meats, or veggies the perfect grain bowls. Made with rich olive oil, sautéed onions, and a touch of spicy Turkish red pepper paste, every bite is full of flavor.
Garnish with fresh parsley and toasted pine nuts for an extra layer of flavor.
Directions
Step 1
In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sliced garlic, and sauté for 4–5 minutes until softened and fragrant.
Step 2
Stir in the bulgur wheat, tomatoes and red pepper paste, tossing to coat for about 1–2 minutes. Add in the veggies if using.
Step 3
Pour in the water or stock , stir well, and bring to a gentle boil. Immediately reduce the heat to low, cover, and let it simmer until all the liquid is absorbed, about 15 minutes.
If the bulgur is not fully in cooked, add an additional ½ cup of water, cover, and continue simmering until tender.
Step 4
Once done, fluff the bulgur with a fork.
Step 5
Garnish with chopped parsley and toasted pine nuts, if desired. Serve warm.
