Fillo Dough
Fillo is tissue-thin sheets of dough that have very little fat. It’s found in the freezer section, and used in both sweet and savory dishes. Because fillo dough doesn’t have much fat, the sheets are usually brushed with melted butter or ghee and then layered together. When it bakes, the layers get airy, crisp, and flaky.
