Directions
Step 1 – Prepare the Pumpkin
Preheat the oven to 350°F (175°C).
Wash the pumpkin thoroughly and cut off the top to create a lid. Scoop out the seeds (save for later) and fibers from inside the pumpkin, leaving the flesh intact.
Step 2 – Prepare the Filling
Cook the rinsed rice in boiling water for 5-7 minutes just until it’s half way cooked.
In a mixing bowl, combine the semi cooked rice, chopped dried fruits (apricots, raisins), nuts, spices, 1 tablespoons of melted ghee, and salt. Mix well to combine.
Step 3 – Stuff the Pumpkin
Brush the pumpkin inside out with the remaining ghee and season with salt. Fill the hollow pumpkin with the rice and fruit mixture. Add 2-3 tablespoons of water to the filling to help steam the rice inside the pumpkin. Pack the filling loosely, as the rice will expand as it cooks.
Place the pumpkin lid back on top.
Step 4 – Bake
Place the stuffed pumpkin on a baking tray and bake in the preheated oven for about 1.5 to 2 hours, or until the pumpkin flesh is tender and can be easily pierced with a knife and the rice is fully cooked through.
Step 5 – Serve
Once cooked, remove the pumpkin from the oven and let it cool slightly. To serve, cut the pumpkin into wedges, so each slice includes both the tender pumpkin flesh and the flavorful rice filling.
