Step 1
Strain chickpeas and reserve chickpea water.
Step 2
Transfer chickpeas to a food processor or a high-speed blender. Remove chickpea “skin” for a smoother hummus (optional). Blend until smooth.
Step 3
Scrape the sides, add tahini, salt, lemon juice and garlic if using. Process again until smooth. Add 3- 4 ice cubes (optional), process once more. Taste and adjust the seasoning.
Note:
Step 4
If the hummus is too thick, add a little bit of the chickpea water one tablespoon at a time and process until you reach the desired consistency. Transfer hummus to serving plate, swirl the top, add olive oil, a sprinkle of paprika and cumin.
Store in the fridge.
