These decadent Medjool Date Truffles are a delicious and easy-to-make treat! Naturally sweetened with dates and coated in chocolate, they make a perfect snack or dessert.
Directions
Step 1 – Prepare the Dough
Place dates, vanilla, cocoa powder, almonds, and shredded coconut into a food processor.
Pulse until a moist dough forms. This will take 2–3 minutes, scraping down the sides of the bowl as needed.
If the dough is too dry, add a few more dates or a teaspoon of date syrup.
Step 2 – Shape the Truffles
Line a baking sheet with parchment paper or a silicone baking mat.
Scoop out 1 tablespoon of dough and roll it into a smooth ball. Place the ball on the prepared baking sheet. Repeat with the remaining dough.
Step 3 – Melt the Chocolate
Melt the chocolate using a double boiler or in the microwave.
Microwave Method: Place the chopped chocolate in a heatproof bowl and microwave in 30-second increments, stirring after each interval, until smooth and fully melted.
Step 4 – Coat the Truffles
Dip each truffle into the melted chocolate, lifting it out with a fork.
Gently tap the fork on the side of the bowl to remove excess chocolate.
Place the coated truffle back on the baking sheet. Repeat with all truffles.
Step 5 – Set the Chocolate
Refrigerate the truffles for about 30 minutes, or until the chocolate has fully set.
Optional: Sprinkle with flaky salt before the chocolate hardens for an extra touch.
Recipe Tips
If your dates are dry, soak them in warm water for 10 minutes, then drain and proceed with the recipe.
Store the truffles in an airtight container in the refrigerator for up to 1 week.
